What are the different types of deli meats?
While you may notice a wide selection of meats in your local grocery store that comes in different colors, sizes, shapes, etc., deli meats are predominantly of three types. They are:
- Freshly prepared meat – This includes pieces of meat that is seasoned with salt and other spices and include meats like baked ham, roasted beef, etc.
- Moderately processed meat – These include meats harvested from the tops of bones that are ground together and emulsified into a batter. Your local butcher then adds seasonings, flavors, binders, and additives to the batter and pours it into molds. Once the meat has a shape, it gets smoked, cooked, sliced, and packaged.
- Fully processed meat – These meats also go through a similar process, just like moderately processed meats. However, these meats go through an extra step where they get vacuumed to get rid of any excess air. Removing excess air protects your meat from bacteria and increases its shelf-life. The meats are later emulsified, fermented, and cased to form different shapes. The meat is then aged for several days, after which it is cooked and smoked.
