McLean Paleo Inspired Turkey Bacon Lasagna

Similar to classic pasta Lasagna this version uses McLean Turkey Breakfast Strips (Bacon) instead of lasagna noodles. Our Turkey Bacon is lean and flavourful. The strips are the perfect width and length to make a low carb, high protein, paleo-inspired lasagna. Modify as you wish with extra veggies. If you prefer a thicker sauce, use tomato paste instead of canned tomatoes, or thicken with paste.
Ingredients
  • 2 packs of McLean Turkey Bacon
  • 1 pack of Frozen Spinach (thaw and drain)
  • 1 large container of quality Ricotta Cheese (original/full fat)
  • 1 pack of McLean Organic Mozzarella
  • Parmesan Cheese
  • 1 medium/large Zucchini
  • 1 jar of strained tomatoes or large can of tomato sauce
  • 1 regular can of stewed tomatoes, or whole tomatoes
  • 1 Onion
  • 4-5 buds of Garlic
  • Oregano
  • Star Anise
  • Nutmeg
  • Olive Oil
  • Sea Salt
  • Black Pepper
Instructions
  1. Remove frozen spinach from package, place in a large bowl and let thaw. (1-hour or microwave) Or pre-thaw in fridge night before.
  2. Once Spinach has thawed, squeeze out excess moisture
  3. Add the Ricotta Cheese and Spinach to large bowl and mix together
  4. In a saucepan, chop onions and garlic and sauté with olive oil until onion is translucent. Approximately 10-15 minutes on low/medium heat.
  5. Once onion mixture is cooked add tomato sauce and stewed tomatoes. Add 3 buds of Star Anise, 1-tbsp of Oregano, 1-tsp salt and pepper and simmer for 20 minutes stirring often.
  6. Slice the Zucchini lengthwise in long thin strips.
  7. Preheat oven to 350F

    Assembly:

  8. Grease a classic Lasagna pan with a little olive oil and a splash of the tomato sauce mixture. Create a thin layer of sauce.
  9. Lay the strips of Turkey Bacon on the pan as you would classic Lasagna pasta
  10. Spread the Ricotta Cheese/Spinach mixture over the Bacon
  11. Sprinkle Cheese/Spinach mixture with Nutmeg
  12. Add another layer of Turkey Bacon
  13. Lay the strips of sliced Zucchini on top of Bacon, as you would classic Lasagna pasta
  14. Season Zucchini with a thin layer of grated Parmesan Cheese, salt and pepper
  15. Add another layer of Turkey Bacon
  16. Pour tomato sauce mixture over the layers
  17. Lay the McLean Organic Mozzarella Cheese slices to cover tomato sauce mix
  18. Bake uncovered for 50-60 minutes or until cheese top is slightly brown
  19. Let rest for 10-15 minutes, and then cut into squares and serve
