Chicken Protein Bowl

Ingredients

Quantity Ingredient
1 Package (8-10 slices) McLean Organic Roasted Chicken Breast
4 Cups Crisp romaine or butter lettuce (or your favourite salad green)
2 boiled eggs (halved)
1/2 Avocado, thinly sliced
1/2 Cucumber
1 Large Carrot, ribboned or spiralized
1/4 Cup Watermelon radish, thinly sliced
1/2 Cup Roasted Chickpeas
1/2 Cup Sweet corn
Optional garnish Sesame seeds
A Pinch Salt
Pesto Yogurt Dressing
1/2 Cup Plain Greek yogurt
2 Tbsp Basil pesto (store-bought or homemade)
1 Tbsp Lemon juice
1 Tbsp Cider vinegar
1 Tbsp Water

Directions

  1. Prepare the dressing, by whisking all ingredients together, adding more water as needed until desired consistency is reached.
  2. Assemble salad: Place ingredients in large bowl. Drizzle with dressing, just before serving.
