Breakfast Tacos Recipes > Breakfast & Brunch > Breakfast Tacos Recipe Information 30-Min Prep time Serves 2 Recipe Ingredients Quantity Ingredient 1 Package Mclean Breakfast Sausage or Smoked Sausage (sliced) 4-6 Small Corn Tortillas 3-4 Eggs 1/2 Cup Mixed Bell Peppers – diced (red, green, yellow) 1/4 Cup Onion (diced) 1/2 Cup Shredded Cheddar Cheese 1/2 Cup Salsa (no added sugar preferred) 1/2 Cup Baby Greens or Arugula Salt & Pepper 1 Tbsp Olive Oil Directions Heat a pan or griddle on Medium Heat and add olive oil. Add diced bell peppers and onions and sauté until softened. Add sliced Mclean breakfast sausage or smoked sausage and cook for 2–3 minutes. Season lightly with salt and pepper. Pour in whisked eggs and scramble together with sausage and vegetables until fully cooked. Warm corn tortillas on a separate pan or griddle until lightly toasted. Sprinkle a small amount of cheddar cheese onto each tortilla. Add sausage, egg and vegetable mixture on top, then sprinkle another layer of cheddar cheese to allow melting.
