Ham and Asparagus Frittata Recipes > Breakfast & Brunch > Ham and Asparagus Frittata Recipe Information 30-Min Prep time Serves 4 Recipe Ingredients Quantity Ingredient 1 Cup McLean Organic Cooked Mini Ham (diced) 8 Large Eggs 1/4 Cup Milk or Heavy Cream 1 Bunch Asparagus (cut into 2" pieces) 1/2 Cup Goat Cheese or Feta (crumbled) 1 tbsp Olive Oil or Butter 1/4 Cup Fresh Chives or Green Onions (chopped) To Taste Salt and Pepper Directions In a medium bowl, whisk together the eggs, milk, half of the chives and a pinch of salt and pepper. Set aside. Preheat your oven's broiler to high. Place a 10" oven safe skillet over medium heat. Add the olive oil or butter. Once hot, add the asparagus and ham. Sauté for about 3–5 minutes until the asparagus is bright green and slightly tender. Spread the asparagus and ham evenly across the bottom of the pan. Pour egg mixture over the top. Use a spatula toe gently move the cooked egg from the edges toward the center for about 1 minute, allowing the raw egg to hit the bottom of the pan. Once the bottom is set but the top is still runny, sprinkle the goat cheese (or feta) and the remaining chives over the top. Transfer the skillet to the oven. Broil for 2-4 minutes.
