Pork Loin Breakfast Sandwich

4–6 Slices McLean Back Bacon
2 Bagels, sliced
2 Eggs
4 Slices Brie Cheese
1 Handful Arugula or Baby Greens
2 Tbsp. Tomato Relish or Fruit Chutney
1 Tbsp. Butter or Oil
Salt and Black Pepper

Directions

Heat a pan over medium heat and cook McLean Back Bacon until lightly crisp and heated through. Set aside.

In the same pan, cook eggs to your preference. Season with salt and black pepper.

Lightly toast bagels until golden.

Spread tomato relish or chutney on the bottom half of each bagel. Layer with arugula or baby greens, followed by back bacon.

Add the cooked egg and top with slices of Brie. Close with the top half of the bagel and allow the cheese to soften slightly from the heat.

Serve warm.
