Sausage Stir Fry

1 Package McLean Breakfast Sausage
2–4 McLean Smokies
2 Carrots (Sliced)
8 Pieces Broccoli
5 Mushrooms (Thick Sliced)
2 Stalks Celery (Diced)
1 Medium Onion (Thinly Sliced)
½ Red Pepper (sliced)
½ Yellow Pepper (sliced)
½ Cup Quinoa or Rice (optional)
1 Tbsp. Olive Oil
1 Tbsp. Soy Sauce
1 Tbsp. Thai Fish Sauce
1 Tsp. Fresh Ginger (Chopped or Shaved)
Salt & Black Pepper

Directions

In a wok or large pan, heat olive oil over medium heat. Add onions, carrots, broccoli, celery, peppers, and mushrooms. Sauté until slightly tender, keeping the vegetables crisp.

Add fresh ginger, soy sauce, and Thai fish sauce. Stir to combine and let cook for another 2–3 minutes.

Slice McLean Organic Pork Sausages, Home-Style Chicken Sausages, or Smokies into bite-sized pieces (remove casing if preferred). Add to the pan and sauté on low to medium heat for 10–15 minutes, until heated through and vegetables are tender. Avoid overcooking.

If using, prepare quinoa or rice separately using chicken or vegetable stock.

Serve the sausage and vegetable mixture on its own or over quinoa or rice. Season with salt and black pepper to taste. Top with shaved Parmesan if desired and serve warm.
