Gluten Free Turkey Bacon Lasagna

This lasagna recipe uses McLean Turkey Breakfast Strips (Bacon) instead of ground beef and replaces wheat noodles with gluten free rice noodles. Modify as you wish with extra veggies. If you prefer a thicker sauce, use tomato paste instead of canned tomatoes.

Ingredients
  • 2 packs of McLean Turkey Bacon
  • 1 pack of Frozen Spinach (thaw and drain)
  • 1 large container of quality Ricotta Cheese (original/full fat)
  • 1 pack of Mozzarella cheese
  • 1 pack of gluten free Rice Lasagna Noodles
  • Parmesan Cheese
  • 1 medium/large Zucchini
  • 1 jar of strained tomatoes or large can of tomato sauce
  • 1 regular can of stewed tomatoes, or whole tomatoes
  • 1 Onion
  • 4-5 buds of Garlic
  • Oregano
  • Nutmeg
  • Olive Oil
  • Sea Salt
  • Black Pepper
  • Fresh Basil
Instructions
  1. Remove frozen spinach from package, place in a large bowl and let thaw. (1-hour or microwave) Or pre-thaw in fridge night before.
  2. Once Spinach has thawed, squeeze out excess moisture.
  3. Pre-cook Lasagna noodles, rinse and set aside.
  4. Add the Ricotta Cheese and Spinach to large bowl and mix together. Sprinkle with Nutmeg and Sea Salt.
  5. In a saucepan, chop onions and garlic and sauté with olive oil until onion is translucent. Approximately 10-15 minutes on low/medium heat.
  6. Once onion mixture is cooked add tomato sauce and stewed tomatoes. Add 1-tbsp of Oregano, salt and pepper and simmer for 20 minutes stirring often.
  7. Slice the Zucchini lengthwise in long thin strips.
  8. Preheat oven to 350F.
  9. Grease a classic Lasagna pan with a little olive oil and a splash of the tomato sauce mixture. Create a thin layer of sauce.
  10. Lay a strip of Lasagna noodles to pan.
  11. Lay a strip of Turkey Bacon on top of noodles.
  12. Spread the Ricotta Cheese/Spinach mixture over the Bacon
  13. Add another layer of noodles and Turkey Bacon
  14. Lay the strips of sliced Zucchini on top of Bacon
  15. Season Zucchini with a thin layer of grated Parmesan Cheese, salt and pepper
  16. Add another layer of noodles and Turkey Bacon
  17. Pour tomato sauce mixture over the layers
  18. Add grated Mozzarella Cheese to cover tomato sauce mix
  19. Bake uncovered for 50-60 minutes or until cheese top is slightly brown
  20. Let rest for 10-15 minutes, and then cut into squares and serve
  21. Garnish with fresh basil.
